Salmon with Sun dried Tomato and asparagus




A perfect recipe for a Dinner with loved ones

Ingredients:

1.  6 ounces Salmon fillet
2. 5 cloves of garlic 
3. 1 inch of ginger 
4. 1/4 cup water
5. 1/2 tbsp. salt
6. 1/2 tbsp. pepper
7. 1/4 tbsp. oregano 
8. 1/4 tbsp. basil
9. 1 tbsp. olive oil
10. 1 small tomato 
11. 1 lemon ( 1/2 lemon cut for juice , 1/2 cut slices to place on top )
12. 250 grams of asparagus 
13. 1/2tbsp. salt

Method :
1.  First take the salmon and defrost it ,then pat it dry with a cloth
2. Then place garlic ,ginger and water and grind to form a paste 
3. Then mix salt and pepper in the paste.
4. Place the salmon in the baking tray (Make sure the skin is faced down)
5. Then pour the paste on salmon and leave to marinade for 20 minutes
6. Then place cut tomato and lemon on the top.
7. After that drizzle the olive oil on the top 
8. Then sprinkle oregano and basil on top
9. Place in Oven for 50 minutes at 220 degrees until the salmon has a slight golden look on the top.(Make sure you wrap the oven tray with aluminium foil)
10.Boil asparagus with salt in a pan for 8 minutes then drain
11. Serve salmon with asparagus

Recipe #7 How to make Cinnamon Delight Cake with pistachio and Brown syrup

HOW TO MAKE 
Cinnamon Delight Cake 
with Pistachio and Brown Syrup 
( serves 8 people  -Best served with Tea or "Chai karak" )

The recipe happened while experimenting in the kitchen. I realised how the cake soaked in most of the brown syrup which resulted in the cake being beautifully moist. IT's perfect for Tea parties and family gatherings.


Ingredients you will need for Cake :
  1. 1 ½ cup all purpose flour
  2. 1/2 tsp. baking powder 
  3. ½ cup white sugar
  4. 1 tsp. salt
  5. 2 tbsp. butter
  6. 1 egg
  7. 1 cup milk
  8. Vanilla essence 



Ingredients you will need for Brown Syrup  :


  1. 1 cup water
  2. ½ cup Brown sugar
  3. Cinnamon powder
  4. 8 pieces of pistachios crushed 

Method:

  1. First place the butter, white sugar and salt and use mixer.
  2. Then mix the egg and milk
  3. Add the vanilla essence
  4. Mix the flour with the baking powder in separate bowl.
  5. Gradually add the flour mixture to the mixer
  6. You should get a smooth light batter.
  7. Place the batter in the cake tin (butter tin before placing batter.)
  8. While the cake bakes for 20 mins  (200 F)
  9. Place the 1 cup water and sugar in a pan on high flame
  10. Once the  sugar is dissolved completely close the flame and leave it to cool should be thick like a syrup.
  11.  Take the cake place on a rack to cool
  12. When serving pour the syrup on the cake and sprinkle cinnamon and pistachio on top of it.

Recipe #6 Baked Lime Chicken with Mash Potato


How to make 

Baked Lime Chicken 
with Mash Potato

A simple and perfect recipe for a Dinner with loved ones

Ingredients:
1.     2 pieces of chicken thigh or leg 450g (keep skin on)
2.    
1 piece ginger around 10cm,
3.    5 cloves of garlic
4.    
1tsp. salt
5.    ½ tsp. pepper
6.    1tsp. oregano
7.    1tsp. basil
8.    1tsp. coriander powder 
9.   Juice 1 large lime  
or 2 tbsp.of lime juice
10. 1tsp. Turmeric powder

Method :
1.    Put the oven on at around 270 degrees
2.    Place ginger ,garlic ,lime juice and grind in the grinder to form a paste.
3.    Wash the chicken with warm water and drain .
4.    Rub the paste and the left ingredients coriander and turmeric powder on the chicken, leave to marinade for 15 mins.

5.   Cut the small onion into 5 pieces and place in oven tray
6. Then place the chicken on to an oven tray
7. Bake for 40 mins.


Ingredients For Mash Potato :
1.     3 large potatoes, peeled
2.  1 tsp salt
3.    ½ tsp. black pepper
4.    ¾ cup milk
5.    2 tablespoons unsalted butter
6. 1/2 cup sour cream 

Method:
1.     Peel the potatoes and boil in 4 cups of water in a large pot.
2.    Bring to boil and then reduce the flame. For around 10-15 mins
3.    Then in another pot put milk and butter and bring to a boil then leave on the side.
4.    Remove the boiled potatoes and place in a large bowl and crush. 
5.    Gradually add the milk and butter mixture, mix well

6.    Then add sour cream, salt and pepper.
7.  Then it is ready to serve. (If you want a more creamy mash then blend the mixture in the blender)
