Recipe #25 Reem's Jumbo Garlic Prawns

HOW TO MAKE 
Jumbo Garlic Prawns 



Prep time: 20 minutes Cook time : 15 mins

Ingredients you will need:
  1. 1 tsp. salt
  2. 1/2 tsp. pepper
  3. juice of 1 sqeezed lemon 
  4. 1 packet jumbo prawns  900 grams (washed and devained)
  5. 3 tbsp. olive oil 
  6. 2 tbsp. soya suace 
  7. 5 cloves of garlic chopped
  8. 1 inch ginger chopped 
  9. 1 bunch of chopped green onion
  10. 1/2 tbsp. oregano
Method:
  1. Wash the deveined prawns and pat dry with a kitchen towel
  2. Then place the prawns in a bowl add salt ,pepper and lemon juice an refrigirate for 15 minutes.
  3. Then place olive oil in a pan on a high flame.
  4. then lower the flame and add ginger,garlic,soya suace and the green onion.
  5. Mix well and then place the prawns evenly in the wok.
  6. Flip the prawns once the side of the prawn has turned to a pink colour
  7. Make sure youdont over cook the prawns

Recipe #24 Thai Chicken Stir fry with fried pancit canton noodles

HOW TO MAKE 
Thai Chicken Stir fry 
with fried pancit canton noodles 





Prep time: 20 minutes Cook time : 15 mins




Ingredients you will need:
  1. 2 inch ginger 
  2. 2 red thai chilli 
  3. 5 garlic cloves
  4. 3 tbsp. olive oil
  5. 5 larges mushrooms chopped
  6. 1 tbsp. soya sauce 
  7. 1 tsp. salt
  8. 1 tsp.pepper
  9.  1 1/2 tbsp . oyster sauce.
  10.  2 chicken breast ( defrosted and cubed)
  11.  1 bunch of green onion chopped
  12. 7 to 8 jarjeer leaves ( can be also subtistuted with thai basil leaves )
For Fried Pancit noodles 
  1. 200 grams pancit noodles
  2. oil for frying.
Method:
  1. In a mortar and pestle ,place ginger chillies and garlic cloves.
  2. Then place heat the oil in a pan and and the crushed mixture and fry.
  3. Then add the mushrooms don't stir them a lot otherwise they will loose their shape.
  4. Then add soya sauce ,salt,pepper and oyster sauce.
  5. Then add the chicken peices and cook until the chicken pieces turn white.
  6. Add the chopped corriander and jarjeer leaves and mix well.
  7. Then rest aside.
  8. In a deep frying pan heat oil and then place the noodles in, do not leave for to long just until they turn light brown.
  9. Then take your serving plate and place the fried noodles as the base.
  10. Then place the chicken stir fry on top.
You may substitute the fried noodles for rice instead to  make this meal an healthier option.

Recipe #23 Reem's Cinnamon Bites

HOW TO MAKE 
Cinnamon Nutella Bites 


Makes (10 bites )
Prep time: 5 minutes Cook time : 10 mins


Ingredients you will need:
  1. 5 pieces of sliced bread 
  2. 3/4 tbsp. cinnamon
  3. 1 tbsp. sugar
  4. 1 tsp. nutmeg (optional)
  5. 2 eggs
  6. 2 tbsp. butter
  7. 4 tbsp. nutella 

Method:

  1. Cut the sides of the sliced bread.
  2. Then take a roller and flatten the bread.
  3. Then use a butter knife and spread the nutella on each slice of bread and roll it.
  4. In a seperate bowl ,beat two eggs,cinnamon,sugar and nutmeg.
  5. Then take a frying pan and melt the butter. (Make sure the flame isn't high)
  6. Then dip the rolls in the egg completely and fry till each side goes brown.
  7. Then take a knife and cut it into two pieces.

Recipe #22 Mushroom and tomato dill Risotto

HOW TO MAKE 
Mushroom and Tomato 
Risotto





Makes ( 4 servings )
Prep time: 15 minutes Cook time : 25 mins




Ingredients you will need:
  1. 1 1/4 cup of arborio rice
  2. 1 large onion chopped
  3. 4 garlic cloves chopped.
  4. 4 tbsp. olive oil  
  5. 1 cup of tomato paste
  6. 1/2 tbsp.pepper
  7. 1/2 tbsp. salt
  8. 1/2 tbsp. oregano 
  9. 3 cups chicken broth
  10. 5 large mushrooms chopped 
  11. 1/4 cup parmesan cheese 
  12. 1/4 cup chopped dill leaves 
  13. 1 cup shredded boiled chicken (optional)
Method:

  1. Rinse  the rice with water , until the foggy white colour turns clear. Then set aside 
  2. Place 2 tbsp. olive oil in a pan then place onions and garlic and fry till it turns a light golden brown.
  3. Then add tomato paste and all dry ingredients and incorporate.( salt , pepper , oregano ) 
  4. Then strain the rice  and add into the mixture and leave to cook for 5 mins.Gradually and the chicken broth to allow the rice to cook.
  5. Then in another pan fry the mushrooms ( When frying mushrooms intially do not stir otherwise they loose their shape)
  6. When the water has reduced to mainly the tomato mixture ,Place the mushrooms, and half of the cheese and mix well ( You can add boiled shredded chicken here if you want to)
  7. Then mix in the dill leaves .
  8. When serving you can add more parmesan cheese on top.

Notes :

If you will not buy ready chicken broth which I personally don't then you can make some by adding pieces of chicken with bones into 1 litre of boiling water. Add half an onion 5 cloves , 1 tbsp. salt and boil the chicken. 

You can later shred the chicken and use it in the risotto or use it to make sandwiches
