Ingredients you will need:
- 200 ml water
- 1 tbsp. strong coffee
- 2 tbsp. sugar
- 1 tsp. vanilla essense powder
- 2 eggs (egg yolk is only needed)
- 1 1/2 packet finger biscuits
- 250 grams mascarpone cream cheese
- 1 packet whipping cream ( Dreamwhip )
- 1 tsp. vanilla essense powder
- 2 tbsp cocoa powder
Method:
- Heat the water and mix the the coffee powder and the essense to it for a rich flavour.Then leve to cool.
- Seperate the eggs and place the egg yolks only in a mixer.
- Add suger and mix until it turns fluffy then add the cream cheese till you get a consistant creamy texture.
- Then fold the whipping cream in the mixture.
- Dip finger biscuits into the coffee and then place the biscuits in the bottom of the serving bowl.
- then spread a layer of the cream mixture over the biscuit base.
- Repeat step 6 and 7
- Then sprinkle cocoa powder on the top layer of the cream
- Place in fridge for a minimum of 6 hours before serving.
