Recipe #21 Reem's Egg based in tomato breakfast

HOW TO MAKE 
Egg based in tomato 


Makes ( 5 servings )
Prep time: 35 minutes 




Ingredients you will need:
  1. 3 large tomatoes chopped
  2. 1 large onion chopped
  3. 5 cloves of garlic 
  4. 1/2 tbsp. salt
  5. 1 tsp.pepper
  6. 1/2 tablespoon Oregano 
  7. 2 tbsp. tomato paste 
  8. 5 eggs 
  9. 1/2 cup shredded mozarella  cheese 
  10. 5 large mushrooms sliced 
  11. 1/2 cup chopped parsley.
  12. 5 tbsp. olive oil.

Method:
  1. Place 3tbsp. olive oil in a pan then place onions and garlic and fry till it turns a light golden brown.
  2. Then add tomato paste and all dry ingredients and incorporate.
  3. Then place the chopped tomotoes in the pan and leave to cook for 15 mins.
  4. then in another pan fry the mushrooms ( When frying mushrooms intially do not stir otherwise they loose their shape)
  5. Place the tomato mixture and blend till a smooth paste is formed.
  6. Place the mixture in a flat frying pan ,make 5 holes in the pan with a spoon and place the eggs in each hole.
  7. Place the mushrooms, cheese and chopped parsley on top.
  8. Place a lid on the pan and leave to steam for 3 mins.
  9. Then serve with any choice of bread you like.

HOW TO MAKE 
A Quick and Easy Pesto 
baguette Snack 

Makes ( 10 slices of baguette)
Prep time: 10 minutes 



The recipe was made with four groups of people in mind. 
1. People who love to munch on yummy snacks 
2. People living in Dorms or live alone


Ingredients you will need for the Pesto Snack:
  1. 1/2 cup Pesto sauce ( homemade Pesto sauce is available on the blog)
  2. 1 cup chopped tomatoes 
  3. 1 small baguette 
  4. 1/2 cup shredded mozzarella cheese
