Ingredients you will need:
- 3 large tomatoes chopped
- 1 large onion chopped
- 5 cloves of garlic
- 1/2 tbsp. salt
- 1 tsp.pepper
- 1/2 tablespoon Oregano
- 2 tbsp. tomato paste
- 5 eggs
- 1/2 cup shredded mozarella cheese
- 5 large mushrooms sliced
- 1/2 cup chopped parsley.
- 5 tbsp. olive oil.
Method:
- Place 3tbsp. olive oil in a pan then place onions and garlic and fry till it turns a light golden brown.
- Then add tomato paste and all dry ingredients and incorporate.
- Then place the chopped tomotoes in the pan and leave to cook for 15 mins.
- then in another pan fry the mushrooms ( When frying mushrooms intially do not stir otherwise they loose their shape)
- Place the tomato mixture and blend till a smooth paste is formed.
- Place the mixture in a flat frying pan ,make 5 holes in the pan with a spoon and place the eggs in each hole.
- Place the mushrooms, cheese and chopped parsley on top.
- Place a lid on the pan and leave to steam for 3 mins.
- Then serve with any choice of bread you like.
