Recipe #24 Thai Chicken Stir fry with fried pancit canton noodles

HOW TO MAKE 
Thai Chicken Stir fry 
with fried pancit canton noodles 





Prep time: 20 minutes Cook time : 15 mins




Ingredients you will need:
  1. 2 inch ginger 
  2. 2 red thai chilli 
  3. 5 garlic cloves
  4. 3 tbsp. olive oil
  5. 5 larges mushrooms chopped
  6. 1 tbsp. soya sauce 
  7. 1 tsp. salt
  8. 1 tsp.pepper
  9.  1 1/2 tbsp . oyster sauce.
  10.  2 chicken breast ( defrosted and cubed)
  11.  1 bunch of green onion chopped
  12. 7 to 8 jarjeer leaves ( can be also subtistuted with thai basil leaves )
For Fried Pancit noodles 
  1. 200 grams pancit noodles
  2. oil for frying.
Method:
  1. In a mortar and pestle ,place ginger chillies and garlic cloves.
  2. Then place heat the oil in a pan and and the crushed mixture and fry.
  3. Then add the mushrooms don't stir them a lot otherwise they will loose their shape.
  4. Then add soya sauce ,salt,pepper and oyster sauce.
  5. Then add the chicken peices and cook until the chicken pieces turn white.
  6. Add the chopped corriander and jarjeer leaves and mix well.
  7. Then rest aside.
  8. In a deep frying pan heat oil and then place the noodles in, do not leave for to long just until they turn light brown.
  9. Then take your serving plate and place the fried noodles as the base.
  10. Then place the chicken stir fry on top.
You may substitute the fried noodles for rice instead to  make this meal an healthier option.
